ESS Defence provides food service and hospitality support to Defence sites across Australia. We deliver high quality meals that support the wellbeing of Australian Defence Force personnel.
We are seeking experienced Chefs to join our teams at HMAS Albatross, Nowra and HMAS Creswell, Jervis Bay. These roles are ideal for chefs with bulk cooking experience who are looking for stability, structured rosters and opportunities to grow their careers within a supportive team environment.
KEY RESPONSIBILITIES
• Prepare high-quality buffet-style meals for breakfast, lunch, dinner and functions
• Maintain food safety, hygiene and HACCP standards
• Support stock control, deliveries and kitchen operations
• Ensure food quality, presentation and portion control
• Provide professional customer service during meal periods
• Work collaboratively as part of a kitchen team to deliver consistent service
SKILLS AND EXPERIENCE
• Certificate III in Commercial Cookery
• Experience in large commercial kitchens or bulk catering environments
• Strong knowledge of HACCP, food safety and allergen management
• Attention to detail with a focus on quality and presentation
• Reliable, organised and team-focused approach
• Ability to obtain and maintain a National Police Check and Defence clearance
